Our family has worked the vines for many generations.In the beginning our predecessors sold bulk wine, and now for over 100 years our family sells St-Saphorin “Les Fosses” in bottles.
The estate was originally agri-viticole until in 1938, Roger Chevalleydecided to devote himself entirely to the vines.His son, Jean-Claude succeded him in 1973.
Presently, Bernard Chevalley has taken over the property of more than 2 hectares, cultivated with respect to nature by the method of ‘production intégrée’ (PI).
The biggest part of the work is done manually; the steep slopes and the many walls of our vineyards reduce the possibility of working with machines.
All of our vineyards surround St-Saphorin, the ground is clay-lime (??) and their aspect facingthe lake gives an ideal sunlight; our region is well known for it’s three suns’:from the sky,the reflection from the lake and the vineyard walls which contain the heat.
These conditions all together allow the grapes to fully ripen.The winemaking and cellaring are done on the estate.
